Easy Quinoa & Sea Lettuce Salad with Iron & Vitamin C

To improve iron absorption, pair iron-rich foods with foods high in Vitamin C too, like tomatoes, citrus or berries.  This salad is an easy, delicious way to bring both iron and vitamin C into your diet and its easy to throw together in minutes, once your quinoa is cooked!
