Raw Vegan Chocolate Espresso Pudding with Irish Moss

This raw chocolate pudding infused with a little espresso and made creamy with the addition of Irish Moss provides a healthier and delicious alternative. Note: to make this recipe, you need to have prepared the gel ahead of time.

 

Ingredients

  • 1/2 cup Irish Moss gel
  • 1 tbsp maple syrup *
  • 1.2 tsp vanilla extract
  • 2 tsp instant espresso powder
  • 2 tbsp unsweetened cocoa powder *
  • 1 cup coconut milk
  • 2 tbsp warmed coconut oil

    Directions

    1. In a blender, combine the all the ingredients, blending for 1 or 2 minutes until very smooth.
    2. Chill before serving.
    3. Garnish with Cacao nibs.
