This raw chocolate pudding infused with a little espresso and made creamy with the addition of Irish Moss provides a healthier and delicious alternative. Note: to make this recipe, you need to have prepared the gel ahead of time.
- 1/2 cup Irish Moss gel
- 1 tbsp maple syrup *
- 1.2 tsp vanilla extract
- 2 tsp instant espresso powder
- 2 tbsp unsweetened cocoa powder *
- 1 cup coconut milk
- 2 tbsp warmed coconut oil
- In a blender, combine the all the ingredients, blending for 1 or 2 minutes until very smooth.
- Chill before serving.
- Garnish with Cacao nibs.
